Premium quality roasted and salted in-shell pistachios have a deliciously juicy flavor that comes from letting the pistachio kernels ripen long enough for their shells to crack on their own. This is different from mechanically opened pistachios from supermarkets. The longer ripening time makes the pistachios larger and more delicious.
